My story

Carine Pichot,
winegrower by passion

My name is Carine Pichot. The daughter, granddaughter and sister of butchers, I grew up in a world of food and sharing. In 2005, I took over a wine estate that was not yet producing bottles. My ambition was clear: to give it an identity, a signature.

This is how Domaine de Fabrègues was born, a blend of quality and pleasure, at the heart of the Languedoc Terrasses de Pézenas appellation. Since then, every vintage is a new adventure, a new expression of this terroir I have learned to love and respect.

My roots in the butcher's trade shaped a vision of wine as the natural companion to the table. That is what inspired the Butcher Estate range, designed specifically to pair with each type of meat.

My philosophy

Precision
as a standard

Across 50 hectares of vines, I work plot by plot: one parcel, one vat. This approach preserves the identity of each terroir, each microclimate.

In February, my team and I turn perfumers. We blend each cuvée to the exact percentage to reveal the best of every vintage. Meticulous, almost obsessive work that calls for an intimate knowledge of every plot and every grape.

For the Focus Pézenas wines, we harvest at night to preserve the freshness of the aromas and the precision of the fruit. Nothing is left to chance.

My wine

Indulgence, fruit and structure

My wine is about indulgence above all. I look for fruit, structure, a velvety texture. Honest wines that make you want to drink them, that call for the table and conversation without trying to impress.

Syrah, Grenache, Mourvèdre, Cinsault and Carignan are at the heart of my blends. I also work with more northerly grapes such as Pinot Noir, Chardonnay and Sauvignon, which bring freshness and elegance to the Haïku range.
