My story

Carine Pichot,
winegrower by passion

Over time, this adventure became deeply personal.

In 2005, I took over Domaine de Fabrègues, with its thousand-year history and unique terroirs. My ambition: to give it a strong signature, between quality and pleasure.

It was my husband who passed on to me his passion for wine, his exacting eye and his genuine attachment to working the vines. At his side, I learned to understand, to feel and to love every nuance of this craft.

Since then, this passion has guided every decision I make, fed by a constant pursuit of rigour and quality.

My philosophy

Precision
as a standard

Every vintage is a new adventure: a renewed challenge, a different emotion, a unique expression of time and nature. Nothing is ever fixed, everything is reinvented, with humility and precision.

I love this terroir deeply, and I strive to respect it, protect it and reveal it faithfully. Beyond the wine, it is a living story that we write, year after year.

Every year, in February, comes the delicate time of blending.

A key moment in the cycle, it calls for a deep, almost intimate knowledge of every plot and every grape. Tasting, selecting, blending: precise gestures that draw on both technique and sensitivity.

Like a perfumer, we compose each cuvée with care, looking for the perfect balance between structure, finesse and aromatic expression. It is in this suspended moment that the wine's identity is truly born.

My wine

Indulgence, fruit and structure

My wines are above all an invitation to pleasure.

They are generous and moreish, carried by bright fruit and an honest structure, never rigid, always in balance. Each cuvée looks for the right note: one that brings together generosity, freshness and finesse.

The estate relies on great southern grapes, Syrah, Grenache, Mourvèdre and Carignan, which bring depth, character and intensity. Alongside them, more northerly grapes such as Pinot Noir, Chardonnay and Sauvignon broaden the palette with tension, elegance and aromatic complexity.

From this diversity come lively, sensitive and precise wines, made to be shared as much as to be felt.
